I have an extremely busy weeknight schedule and usually I come home exhausted and not wanting to make dinner. (Anyone else feel me?!)
This past week I decided to push my creative self and come up with a dinner plan that was filled with dinners I could make in 30 minutes or less that weren’t complicated but also fit my needs AND tasted good!
Here’s what I came up with:
1- Southern Style Chicken Nuggets w/Roasted Cauliflower
This recipe I totally cheated by using frozen nuggets but none the less it was still a victory in my book! I got dinner made on a Monday night!!
2- Buffalo Chicken Pasta Bake
On Sunday afternoon I made 3 boneless skinless chicken breast in my crockpot with Frank’s Buffalo Sauce. Planning ahead and having this prepped cut back on the time during the week!
3- Buffalo Chicken Quesadilla
Since I prepped chicken breast in the crockpot I was prepared for another buffalo chicken recipe! This one takes like 3 minutes to cook up!
-1 flour tortilla (your choice of brand!)
-2 2-3 oz of shredded buffalo chicken
– a sprinkle of fat free mozzarella (I fools the MyWW plan and anything less than 1/4 c is zero points!)
Add your flour tortilla to a heated skillet, inside add chicken and cheese, fold and heat! I served mine with a veggie (carrots cuz those are my jam!) and bolthouse farms ranch!
This is for all you bacon lovers out there! Of which I am not! But the nice thing about this recipe is I could put the bacon on my husband’s half!
We all know by now how to make 2 ingredient dough (but don’t worry I have your back if you have no clue what I’m talking about!) and said dough is the rising star of this recipe! With 2ID I think I could prepare a menu for a whole month and still not get tired of it! I really enjoy it!
4 BLT Pizza (12 WW 💚 9 WW 💙💜)Ingredients:-1 cup self rising flour- 3/4 cup 0% Greek yogurt-pinch of salt – 9 tbl bolthouse farms ranch-3 tbl light miracle whip-1 large boneless skinless chicken breast-3 slices center cut bacon-1/2 cup ff shreds cheese-2 cups chopped lettuce-1/2 tomato chopped
*First make 2 ingredient dough by mixing the flour and yogurt! Sprinkle in a touch of salt and stretch into a pizza circle!*Next bake your crust at 350 degrees for 10-12 minutes (or for longer if you want it to be crispier!)*Once crust is baked add your sauce by mixing the ranch and miracle whip. Top with chicken, bacon and cheese than return to your oven for another 10-12 minutes**I cooked my chicken breast in a skilled on my stove top in non stick spray with the bacon! I just chopped both of them up in bite size piece and allowed them to cook while the crust was baking!*once pizza is finished top with lettuce and tomato
Pumpkin Pancakes (2 WW 💚 1 WW 💙💜 *per pancake)
This recipe is from the WW app I just swapped out the milk for water and omitted the brown sugar! I made 19 pancakes using a 1/4 cup measuring cup to scoop my pancake batter!
Ingredients:-2 cups self rising flour-1 cup pumpkin purée-2 eggs- cinnamon to taste-1 cup water*Mix all ingredients. Scoop into desired serving size and cook on a skillet or griddle* I served my pancakes with fat free reddi whip and sugar free pancake syrup for 0 added smart points! Since it made so many pancakes it was great for leftover lunches the next day!
