5 WEEKNIGHT DINNER IDEAS MADE IN 30 MINUTES OR LESS

DINNER #1 Buffalo Chicken Rolls Up

Ingredients:

-2 containers fat free crescent rolls

-8 oz chicken breast (per cooked* see below)

-1 cup mozzarella fat free cheese

*Pop open crescent rolls, add a pinch of chicken and cheese, roll up. Bake on a cookie sheet covered in parchment paper. Follow cooking instructions on crescent rolls wrapper. These pair great with ranch and buffalo sauce mixed together for a dipping sauce!

**How to make buffalo shredded chicken:

-4-5 large boneless skinless chicken breast (trimmed!)

-1/2 cup Frank’s buffalo wing sauce

*Put together in a crock pot on high for 3-4 hours. Shred with a fork when fully cooked. Keep in the fridge in a Tupperware for up to 6 days or put into the freezer for up to 60 days.

DINNER #2 Southern Style Hashbrowns

Ingredients:

-3 cups frozen hashbrowns

-1/2 cup chopped yellow onion

-2 cups chopped sweet peppers

*Spray a skilled with non stick spray. Add onion and pepper and cook on medium heat until onion is translucent in color. Add hashbrowns and cook until liking. Makes 3 servings. Serve with a side of eggs.

DINNER #3: Knockoff Chick-Fil-A Sandwich

Ingredients:

-Frozen chicken nuggets (I used the Southern Style nuggets from Walmart)

-2 slices Nature’s Own Butter bread (toasted)

-1 tbl light miracle whip

-Pickles

*Cook nuggets in oven or air fryer per package instructions. Toast bread and assemble sandwich!

DINNER #4: Buffalo Chicken Cauliflower Pasta Bake

Ingredients-

-4 oz pasta (any!)

-8 oz shredded buffalo chicken

-1 bag fat free mozzarella cheese (or 1 3/4 cups)

-2 16 oz frozen bags cauliflower roasted

-1/2 cup Frank’s buffalo wing sauce

-3 tbl “I can’t believe it’s not butter”

-2 tbl bread crumbs

*Cook pasta. Mix all ingredients (except bread crumbs) together in a large bowl. Spray a 9×9 baking dish with nonstick spray and dump in ingredients. Sprinkle with bread crumbs. Bake at 350 for 25-30 minutes or until warmed through.

DINNER #5: Turkey Kielbasa With Roasted Veggies

Ingredients:

-16 oz turkey kielbasa

-1 large onion, chopped

-3 cups chopped sweet peppers

Chop all ingredients. Add to a skilled sprayed with non stick spray. Cook on medium heat for 12-18 minutes or until onions are translucent and peppers are roasted.

Grocery list:

-1 large white onion

-1 bag sweet peppers

-1 turkey kielbasa (16 oz)

-1 bag frozen hashbrowns

-1 dozen eggs

-1 box bow tie pasta

-Frank’s buffalo wing sauce

-2 bags fat free mozzarella shredded cheese

-4 lbs boneless skinless chicken breast

-2 containers fat free crescent rolls

-Non stick cooking spray

-I can’t believe it’s not butter light

-2 bags frozen cauliflower

-Nature’s own butter bread

-light miracle whip

-Pickles

-Southern Style Chicken Nuggets

-Bread crumbs
