I think we all need breakfast ideas that don’t include eggs! If you’re busy like me and meal prep for your week ahead of time, these recipes will help you not only stay on track but also satisfy your breakfast cravings!


Banana berry protein bites

-2 bananas (the riper the better!)

-8 dates

-2 cups oats

-2 tbl nut butter

-2 scoops protein (you can use whatever you’d like! I used the PEscience Vegan Wildberry hence the name “berry”! I’ll link it below so you can check it out!)

-2 tbl chia seeds

-2 tbl hemp hearts

-1 tsp cinnamon

-1 tbl vanilla extract

-pinch of salt

-1/4 c chocolate chips

*Pulse your oats in your food processor until they are blended more to an oat flour consistency. Remove and set aside. Add bananas, dates, vanilla, nut butter, chia seeds, hemp hearts, cinnamon to food processor and blend until smooth. Add protein and pulse until mixed well. Remove the mix and place in a large bowl. Add in oats. Stir well. Add in chocolate chips, stir than roll into bite size balls.

Makes 24 bites. Refrigerate bites for up to 7 days.


Apple pie breakfast muffins

-1 chia egg or 2 regular eggs (Chia egg = 2 tbl chia seeds + 4 tbl water, let sit for 3-4 minutes)

-2 bananas (the riper the better!)

-1 tbl vanilla



-1 1/3 cup crockpot apples (*See link for recipe!)

-2 scoops protein (I used PEscience Vegan but use any that you would like!)

-1 1/3 c oats

*Mash bananas in bowl, add in vanilla, cinnamon and salt. Mix well. Add in apples and protein. Adding the protein before the oats will help the apples not sink all to the bottom of the muffin. If you are not using protein sub for 1 tbl flour. Add in chia egg or 2 regular eggs and oats. Stir to combine.

Makes 6 large muffins or 12 regular muffins. Bake at 350 degrees for 20-22 minutes or until muffins are baked through. Store in refrigerator for up to 7 days.


Apple Pie Burritos

-2 cups crockpot apples (*See recipe link below!)

-8 tortillas (Any! I used a combination of flour and low carb!)


-Sugar substitute

*Put 1/4 c of the apples into each tortilla. Wrap tortillas and place on a baking sheet covered in foil and sprayed with nonstick spray. Sprinkle with cinnamon and sugar substitute (optional) Bake at 350 degrees until tortillas are crunchy.
