POTATO NACHOS

-1 large potato

-1/4 cup fat free refried beans

-2 tbl water

-1/4 cup vegan cheese

-1/2 small tomato

-lettuce

*Cut potato in wedges and bake at 425 degrees until crispy (about 20 minutes)

*Add beans, water and cheese to a small pot on the stove until it becomes creamy

*Assemble by covering potatoes with bean cheese sauce, tomatoes and lettuce
