WHAT I ATE THIS WEEK

I eat the same thing M-F, usually I just switch up dinner. However this week I just rotated between two dinners to make my life simple!

Here’s what I ate:

Breakfast: fruit + a vegan breakfast burrito

Burrito Recipe: makes 6 burriots

-6 low carb tortillas

-4 servings JUST egg

-6 oz potato

-1 cup black beans

-1/3 cup salsa

*I cook my potato in a pan on my stove top with cooking spray, than add in my black beans and salsa. I cook the JUST egg separate! Once everything is cooked to my liking I just add about 1/3 cup of the mix with a little JUST egg to each burrito and roll them up! I find the store perfectly wrapped in wax paper than foil!

Lunch: chickpea roasted zucchini salad

-2 cans chickpeas

-3 Roma tomatoes

-3 large zucchini

-5 tbl spicy brown mustard

-3 tbl vegan mayo

*cook zucchini on your stove top in cooking spray until it’s nice and brown. Chop tomatoes, drain and rinse chick peas and add with zucchini in a large bowl. Add your mustard and mayo and a pinch of salt together with a splash of water, whisk and pour over salad. Makes 5 servings

Snack: carrots or fruit + black bean brownies

These brownies are THE BEST! Don’t knock em til you try them!!! You can’t taste the black beans AT ALL!

-1 can black beans (drained and rinsed)
-1 ripe banana
-1 cup oat flour (pulse 1 cup oats in the blender until smooth if you don’t have oat flour!!)
-2 scoops chocolate protein
-7 pitted dates
-1/4 cup cold water
-pinch of sea salt
Add dates, water and banana to your food processor, blend to a paste. Add black beans, sea salt and protein. Lastly add in your oat flour and pulse to combine. Pour batter into a brownie pan or a 12 count muffin tin. Bake at 350 degrees for 15-18 minutes or until completely baked

Dinner: vegan lasagna or a Buddha bowl

Vegan Lasagna

6oz ready to cook lasagna noodles
2 large zucchini
8 oz lightlife crumbles
2 cups pasta sauce
1 cup water

I put the pasta sauce and water in a pot and brought it to a simmer
Cookes the crumbles
Thin sliced the zucchini
And than once the sauce and crumbed were cooked I layered it 3xs

Baked it according to the noodle directions and it turned out AMAZING!!

Buddha Bowl: potato (air fried), kidney beans, tomato, zucchini (also air fried) and spinach artichoke hummus (I didn’t have the exact amount either night!)

Simple, easy and delicious 😍

Another thing I wanted to add is I usually have a banana before bed. Since I run every single day I try to have one with my electrolytes at night!
