INSTANT POT RECIPES – ALL VEGAN!

RECIPE #1: Vegan Sausage And Potato Melody

Ingredients:

-Potatoes

-Onions

-Carrots

-Seasonings (I used a garlic and parsley mix!)

-Vegan sausages

*You don’t have to have a certain amount of anything, this is just a dump and go recipe! Use any brand of sausage and any type of potato in any amount!

-Saute onions and carrots in a little water in the pot for about 5 minutes, than add the rest of the ingredients. Turn on ‘manual’ for 5 minutes and set to naturally release for 10 minutes

RECIPE #2: Rice and Veggies (Asian inspired!)

-1 cup rice

-1/2 head cabbage (I used purple!)

-1/2 onion

-1 carrot

-1 lemon (squeeze for juice)

-jalepeno

-2 cups water

-seasoning of choice

*Saute onion and carrot for about 5 minutes in water, add the rest of the ingredients cook on “rice” and set to a natural release for 10 minutes

*You can substitute 1 cup of coconut water for water to add a lot more flavor

RECIPE #3 VEGAN CHEESE SAUCE -Recipe is From @PlantifulKiki

-3 cups potatoes (I used Yukon so I don’t have to peel them)

-1/2 cup carrots

-1 1/2 cups water

-3-4 tbl nutritional yeast

-seasoning of choice

*Cook carrots and potatoes for 5 minutes, manually release for 10 minutes. Remove from instant pot and put into either a high speed blender or a food processor. Add water, nutritional yeast and seasoning. Blend until creamy. Store in a glass jar in the fridge for up to 7 days
