My smoothie:

-1 whole banana

– 2 cups frozen berries

-2 cups frozen spinach

-16 oz water

My lunch:

-5 purple potatoes

-1 cup cucumber

-1 cup red peppers

-dipping sauce:

4 tbl dijon mustard

-1 tbl soy sauce

-1 tsp lemon juice

My dinner:

-1 russet potato (baked)

-1 cup mix of mushrooms, onions and spinach (If you can’t find the frozen mix I used just used this combo)

-chickpea salad:

-1 can chickpeas drained and rinsed

-4 tbl dijon mustard

-trader joe’s vegan chickenless seasoning

-lemon juice

*Mash up chickpeas with a folk, add dressing and enjoy!
