Pumpkin Pie Donuts

-1 1/2 cup oats

-1 can pumpkin puree

-3 tbl flaxseed

-1 tsp baking soda

-1 tsp baking powder

-1 tbl cinnamon

*Topping: 1 tbl cinnamon + 1 tbl stevia

*Mix all ingredients and let sit for 3-4 minutes sit so that flaxseeds can soak up some of the moisture of the pumpkin

Bake at 350 degrees for 25-28 minutes or until firm.

*You can put them into donut molds or muffin tins, but I think they make better donuts!

Dip the tops in the stevia cinnamon once they’ve cool a bit!

Makes 12 donuts / 12 muffins

  1. In your YouTube video you said we could use oat flour. Would I use 1.5 cups of oat flour? Or pulse the 1.5 cups of oats and use what ever amount of flour that makes?


    1. Correct! Take you 1 1/2 cups oats and pulse and whatever volume that equals throw it in! It’ll make the donuts smoother in texture!
